Ruth Bell Graham’s Oatmeal Icebox Cookies Recipe

By   •   December 13, 2023

One of the ways Ruth Bell Graham showed love to her family, friends, and even strangers was by cooking or baking.

Her son, Franklin Graham, once said, “She loved God’s people, especially those who needed a helping hand, a guiding touch, or a loving hug. She delighted in doing things that you never heard about—cooking for a sick neighbor, teaching Sunday school, and visiting the jail.”

Encourage others by sharing these delicious cookies with friends and family—and those who could use a little extra care this Christmas.

Oatmeal Icebox Cookies Recipe

Ingredients:

1 cup brown sugar
1 cup white sugar
1 cup flour
2 cups nuts (of your choice), chopped
3 cups old-fashioned oats
2 sticks margarine, softened
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 eggs

Instructions:

Cream together the sugar and softened margarine. Add in eggs. Sift the flour, baking soda, and salt, and add it to the mixture. Next, add vanilla, oats, and chopped nuts.

Roll the dough into several long rolls on a floured surface. Wrap each roll in wax paper and store in freezer until needed.

As needed, slice thin and place well-spaced on a greased cookie sheet.

Bake at 300° for 10-15 minutes.
