Ingredients:
8 ounce pkg. cream cheese
¼ cup sugar
½ teaspoon vanilla
1 8-inch unbaked pie crust
1 egg
Filling:
1 ¼ cup pumpkin
½ cup sugar
1 teaspoon cinnamon
¼ teaspoon ginger
¼ teaspoon nutmeg
1 cup evaporated milk
2 eggs, slightly beaten
Dash of salt
Instructions:
Combine softened cream cheese, sugar, and vanilla. Mix well.
Add egg, mix well.
Spread mixture on bottom of crust.
Combine remaining ingredients. Mix well.
Carefully pour over cream cheese mixture. Bake 1 hour at 350 degrees or until done (knife comes out clean).
Cool. If desired, brush with maple syrup and garnish with nuts or serve with whipped cream.
